Ginkyō [pronounced as ‘Geen-keo’] by Kinki is a modern, chic Japanese bistro that surprises your palate with authentic elements combined with contemporary twists, creative techniques, and unique ingredients around the world. Brought to you by the team behind the iconic Kinki located at Customs House, we expand further on our ethos of Defying Tradition with the culinary concept on a fusion of global flavours with Japanese favourites. The shared-dining menu features small plates, unconventional dishes, and specialties that suit the cosmopolitan nature of our guests at Holland Village. Enjoy exciting signature cocktails and drinks against an audio backdrop of cool soundtracks whilst catching up with friends.

 

The name Ginkyō is inspired by Icho Matsuri (Ginkgo Festival), where both locals and international tourists gather during the fall season in Tokyo to celebrate one of the most breathtaking sights: brilliant golden hues emanating from the gingko leaves, creating a truly magnificent spectacle! At Ginkyō, we seamlessly intertwine the elegance of Japanese design with various elements reminiscent of Japanese Matsuris, all harmonizing to create an ambiance that is perfect for all celebrations. You’ll be greeted by an abstract Torii (gateway) at the entrance as you arrive. We invite you to celebrate life with every bite and sip and to live in the moment with your friends and loved ones.

Head Chef - Terence Ong

Chef Terence began his culinary journey at a tender age of 14, fueled by a family legacy of chefs, and his desire to overcome financial hardship from a young age.

He has always loved Japanese cuisine as a child and during his free time, he loves to cook Japanese food at home, listen to Japanese rock music and watches manga. This also led him to pursue a career as a chef specializing in fusion Japanese cuisine.

Off-duty, Terence, a motocross enthusiast, embraces the adrenaline, and races through life with a love for speed.

Currently steering the culinary helm as the Head Chef at Kinki Restaurant & Bar and Ginkyō by Kinki, Chef Terence continues to break traditions, creating crowd favourite Japanese dishes with a global twist. His aspirations for Ginkyō is to emulate Kinki's cool lifestyle concept while showcasing the local talents under him.

General Manager - Dax Taparan

Dax is the head maestro of both Kinki Restaurant & Bar and Ginkyō by Kinki. He is a spirited and accomplished professional with over 28 years of expertise in the hospitality industry and his journey into hospitality commenced at a young age of 14.

An avid traveller, Dax has embarked on six journeys to Korea in just two years, captivated by the exceptional hospitality and rich culture. Beyond work, Dax cherishes family moments, inspiring his kids to explore diverse dining scenes, and making every meal an adventure.

Dax focus for Ginkyō is to infuse warmth into the service and create experiences beyond the ordinary, creating a dining experience that transcends the expected. With an attentive spirit and a welcoming demeanour, Dax ensures that each guest feels not only attended to but genuinely embraced by the restaurant's hospitality.
